Greek-Inspired Tzatziki with Wellsprout

Cool, creamy, and full of flavour, this tzatziki is inspired by the Greek classic and built around the powerful probiotic and prebiotic pairing of good yogurt and Wellsprout Daily Superblend. It works as a dip, a spread, a dressing, or a dollop alongside almost anything. Simple to make, good for your gut, and far better than anything from a tub.

Ingredients
- 1 cup full-fat Greek yogurt (use a good live culture yogurt for maximum probiotic benefit)
- 1 scoop Wellsprout Daily Superblend
- ½ cucumber, grated
- 1 small clove of garlic, finely grated or minced
- 1 tbsp extra virgin olive oil, plus extra to serve
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, finely chopped (or 1 tsp dried)
- 1 tbsp fresh mint, finely chopped
- A generous pinch of flaky sea salt
- Freshly cracked black pepper to taste
Method
- Grate the cucumber coarsely and place in a clean kitchen towel or a piece of muslin. Squeeze firmly to remove as much water as possible. This step is essential for a thick, creamy dip.
- In a bowl, combine the Greek yogurt and Wellsprout Daily Superblend. Mix well until fully incorporated and smooth.
- Add the squeezed cucumber, garlic, lemon juice, dill, and mint. Stir to combine.
- Season generously with sea salt and black pepper. Taste and adjust the lemon or garlic to your preference.
- Cover and rest in the fridge for at least 15 minutes before serving. This allows the flavours to come together properly.
- To serve, spoon into a bowl, drizzle with good olive oil, and finish with a pinch of dried chilli flakes or a few extra herbs.
Tips & Variations
- The longer it rests in the fridge, the better it gets. Make it the night before if you can.
- Use labne instead of Greek yogurt for an even thicker, tangier result with higher protein content.
- Add a teaspoon of sumac or za'atar on top when serving for a Middle Eastern twist.
- Works brilliantly as a spread inside wraps and flatbreads, alongside grilled fish or chicken, or simply with warm toasted pitta and crudites.
- Stir through a tablespoon of tahini for a nuttier, more complex depth of flavour.
